Description

[appearance] red purple powder
[character] the natural red pigment extracted from the calyx of Roselle. The product is soluble in water, ethanol, oil and acetone. In acid condition, the solution is purplish red and the color is stable. At ph2.85, the maximum absorption peak is about 520nm, and it will change with the increase of pH value, and the color of the pigment will obviously fade. This product is only suitable for acid food, sensitive to light and heat, unstable to oxygen and metal ions. Metal chelating agents such as phytic acid, chloride and L-ascorbic acid can be added to improve their heat and light resistance.
